In the ancient fortresses of the medieval town of Butera, we find the osteria contemporanea, which welcomes its guests with quality and warmth.

We are in the ancient and beautiful stronghold of the town of Butera, in the province of Caltanisetta, and we are immediately enveloped by the magical atmosphere that only a timeless place like this can have. Ours is a walk through history, in centuries when different cultures covered our same steps and built the magnificent fortresses that characterize the medieval town.
The Arab Norman Castle is the birthplace of the osteria contemporanea Dentro le Mura, an elegant and refined restaurant where the beating heart of gastronomic excellence, superior main ingredients and gourmet masterpieces lies, accompanied by the warmth of family conviviality, typical of an osteria.

Quality and customer care are the foundations of the creed of the married couple, Carmelo Giuliana and Maria Grazia Guzzardella, who expanded their wine bar and transformed it into a venue for culinary well-being at 360°, enhancing the main ingredients of the territory and dedicating only the best to its selected 30 diners, thanks to the care of Chef Stefano Toscano and Sous Chef Pilar Toledo.
Dentro le Mura offers a refined cuisine with tasting menus that vary according to the seasonality of the ingredients; so we sit down at the table to enjoy the new menu entries of the autumn menu, like the appetizer: stuffed quail leg with seared breast on the side, enriched with yogurt sauce, pea ice cream and prosciutto powder.
Next, the turmeric risotto with its warm colors, embraces our palate with the unexpected flavor of the pairing of red mullet with wild fennel, Corinth raisins, typical of the area and not as sweet as normal raisins, and strictly Italian toasted pine nuts.
From a prestigious wine bar, we couldn’t expect anything less than a selection of Italian and international labels of the highest quality. The customers of Dentro le Mura are happy to be assisted and the owners are just as pleased to be able to introduce their guests to the wines of Sicily, local gems not always known to the mass market but appreciated by true connoisseurs.
The philosophy of the quality research of the osteria contemporanea Dentro le Mura, is also reflected in the choice of water. San Benedetto Millennium Water, which springs from a millennial aquifer that with its 0,0001% of nitrates, crowns the refined taste combinations and complements an elegant table with its glass 0,65L format.
We conclude our evening inside the ancient fortresses of a timeless village with its scent of sea and enchantment. This is the beating heart of the culinary art that starts from the territory, without depriving itself of important ingredients, re-interpreted by expert hands and visionary chefs.
