The classic pizzas are always on the menu. Their reworked Quattro Formaggi pizza (four kinds of cheese pizza) has no tomatoes and uses cow's milk mozzarella with Castelmagno cream, ricotta cream with brigasca sheep cheese, turnip powder, figs, pears, and ginger compotes.
Note that one of the three ovens is dedicated to gluten-free options to satisfy their guests' most special needs.
